Stopping Mango Rot: An Essential Oil's Surprising Effect

Scientists found that a tiny molecule called trans-2-hexenal, which is part of many plant oils, can stop a nasty fungus called Neofusicoccum parvum from making mangoes go bad. This fungus is a big problem for mango farmers, but this little oil compound packs a big punch. The scientists tested trans-2-hexenal in a lab and found that it messes up the fungus's cells, making holes in their walls and membranes. It even causes the cells to make too many harmful molecules called reactive oxygen species (ROS), which damage the cell membranes further. This damage is so bad that it can kill the fungus.

To make using this oil easier, they made a special kind of aerogel that holds the oil and can be sprayed on fruits. They tried this on real mangoes and found that it stopped the rot in a dose-dependent way. A small amount, 40 microliters per liter, worked just as well as a common fungicide called prochloraz.
