Grand Haven Eatery Shuts Its Doors After a Short Reboot

The Paisley Pig, which had been part of Grand Haven’s dining scene for nine years, will close its doors on March 29. The owners, Josh and Katie Sandberg, posted the news on Facebook after a brief attempt to revive the restaurant. They explained that rising wages and food prices have made it impossible to keep the business afloat in today’s market. The Sandbergs had previously worked long hours at Muskegon Heights’ Hearthstone Bistro before opening the Paisley Pig in 2017. They marketed it as a “fresh, local, fun” gastropub with dishes ranging from pulled‑pork nachos to Michigan bison meatloaf.

Their menu mixed American staples with Southern twists, a strategy Josh had mentioned in earlier interviews. In January 2025 the couple sold the restaurant to West Michigan entrepreneur Brad Martell, who promised new daily lunch options and weekend specials. However, less than a year later the Sandbergs regained ownership through social media announcements. Now they are inviting patrons to dine one last time before the final shutdown, encouraging use of remaining gift cards. The owners have tried to give staff ample notice and have reached out within the restaurant community for job referrals. Their decision highlights how even beloved local spots can struggle under shifting economic pressures.
