Reading, Pennsylvania, USATuesday, May 5, 2026

A steaming bowl of homemade soup can lift spirits and soothe throats when friends feel under the weather. This beef barley recipe is easy to prepare in bulk, freezes well for up to three months, and can be reheated whenever a cold or flu strikes.

Ingredients

  • 2 lb boneless chuck – cut into half‑inch cubes
  • 1 tsp salt + ½ tsp pepper (each side of the meat)
  • Olive oil – enough for a large pot
  • 1 Tbsp butter
  • Celery, garlic, onion – chopped
  • ½ tsp salt + ¼ tsp pepper (vegetables)
  • Low‑sodium chicken broth – 2 cups
  • 1 Tbsp Worcestershire sauce
  • Fresh thyme, bay leaves, 2 cups water
  • Pearl barley – 1 cup
  • Sliced carrots, diced turnip – 2 cups total
  • Red wine vinegar – splash
  • Fresh parsley – chopped (for serving)

Instructions

  1. Brown the Beef
    • Heat olive oil over medium‑high heat, add butter.
    • Brown half the meat for ~5 min; remove to a plate.
    • Repeat with remaining beef.
  1. Sauté Veggies

    • Lower heat to medium; add celery, garlic, onion.
    • Season with ½ tsp salt and ¼ tsp pepper.
    • Cook until softened (~5 min), scraping up browned bits.
  2. Build the Broth

    • Pour in chicken broth, Worcestershire sauce, thyme, bay leaves, and water.
    • Bring to a boil.
  3. Simmer the Meat

    • Return browned beef and juices.
    • Reduce to medium‑low, partially cover; simmer ~1 hr until nearly tender.
    • Skim off foam.
  4. Add Grains & Veggies

    • Stir in pearl barley, carrots, turnip.
    • Add remaining ½ tsp salt and ¼ tsp pepper.
    • Cover; simmer until barley tender (~40–50 min).
  5. Finish & Serve

    • Splash red wine vinegar; taste and adjust seasoning.
    • Remove bay leaves, stir in fresh parsley.
    • Serve hot; reheated soups taste even better with parsley added at the end.

Storage Tips

  • Yield: ~3 quarts.
  • Freezing: Divide into zipper‑style bags or containers, freeze without parsley.
  • Reheating: Defrost overnight in the refrigerator; add fresh herbs before serving.

Enjoy a comforting bowl that’s ready when you need it most!
